Chemical properties of sorbitol

　　This product is a 50% or 70% aqueous solution of sorbitol. It is a viscous transparent liquid with optical rotation, slightly sweet taste and hygroscopicity. It is soluble in various metals, and unstable at high temperatures. It can participate in the reactions of anhydride, esterification, etherification, oxidation, reduction and isomerization, and can form complexes with various metals.
